Quinoa Medley with Beans and Corn
Ingredient List
1 1/4 cups quinoa, rinsed
1 15-oz. can black beans, drained and rinsed
1 cup frozen corn
1/2 cup chunky salsa, divided
1 tsp. chili powder
1/4 cup chopped cilantro
2 Tbs. olive oil
lime wedges, for garnish
Directions
Bring 2 cups water to a boil in saucepan. Stir in quinoa, cover, and reduce heat to medium. Simmer 10 minutes.
Add beans, corn, 1/4 cup salsa and chili powder; season with salt and pepper. Return to a boil. Cover, and cook 2 to 5 minutes more, or until quinoa is tender.
Stir in cilantro, oil and remaining salsa. Divide among bowls, garnish with lime wedges, and serve.
Sharon, I love this! Jack loves any sort of grain and bean combination and I was looking for quick and easy ones.
ReplyDeleteI am doing this tonight. Jack is anti-spicy right now so I think I will add just a bit of pureed tomatos instead of the salsa during the first part and then at the end I will add some extra hot salsa for B & I. I'm trying to get Jack into avacado so we'll def. do that as well.
I'll let you all know how it goes.
Sharon...sorry to be totally ignorant but can you share about freezing your own corn, this is a dream of mine since I love our Jersey corn so much.
Super easy! I wait for good organic corn. Clean it and cut the kernels off the cob. Place directly in freezer bags and toss in freezer.

ReplyDeleteI did just as I mentioned and used some crushed tomato in the early stage where it says to add salsa. Then I add some fresh grated cheddar to his (everything goes down better with cheddar in our house) and he ate it. He tried a little avocado but he's still skeptical.
I then added some chipotle salsa to mine, mashed some avocado and mixed it in and did the cilantro, it was so delicious. And did I mention easy...B loved it too and is taking the leftovers to work today. Thanks Sharon and thanks for the corn tip.
No blanching!Take the fresh frozen out of the freezer and throw it in your dinner! The taste is amazing.
ReplyDeleteI blanched mine this year! I'll have to try it that way next year. Mine is a bit chewy when i use it......i'm looking for a more impressive technique! Thanks for sharing.
ReplyDeletewe froze this year and no blanching....why bother! I'm going to try this in the next few days....I have cilantro in my fridge, and will go with tomatoes and a jalepeno as that is what I have. will let you know...maybe we'll invite Giani over!
